  • 1 cup powdered sugar
  • 1 to 2 tablespoons milk (or substitute water)
  • 1 teaspoon almond extract

Instructions

  1. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper or a Silpat liner.
  2. In a medium bowl, whisk together the all-purpose flour, baking powder, and salt.
  3. Using a stand mixer, beat the unsalted butter and granulated sugar together until light and fluffy.
  4. Mix in the egg and 2 teaspoons of almond extract until fully combined.
  5. Gradually add the flour mixture in increments of 1/2 cup, mixing well after each addition.
  6. Roll about 1 tablespoon of dough into small balls and flatten them into disks.
  7. Arrange the shaped dough onto the prepared baking sheet, spacing them evenly.
  8. Bake for 8 minutes. Remove from the oven and let rest on the baking sheet for 5 minutes.
  9. Transfer the cookies to a wire rack to cool completely.
  10. In a small bowl, whisk together powdered sugar, 1 tablespoon of milk, and 1 teaspoon of almond extract until smooth.
  11. Spread the icing over each cooled cookie and allow it to set for about 10 minutes.
  12. Store the iced cookies in the refrigerator.
