Description
Almond Meltaway Cookies are delicate, buttery cookies flavored with almond extract and topped with a sweet almond icing. They have a tender crumb and a light glaze that hardens perfectly.

- 2 cups all-purpose flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1 cup unsalted butter (room temperature)
- 3/4 cup granulated sugar
- 1 large egg
- 2 teaspoons almond extract
- 1 cup powdered sugar
- 1 to 2 tablespoons milk (or substitute water)
- 1 teaspoon almond extract
Instructions
- Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper or a Silpat liner.
- In a medium bowl, whisk together the all-purpose flour, baking powder, and salt.
- Using a stand mixer, beat the unsalted butter and granulated sugar together until light and fluffy.
- Mix in the egg and 2 teaspoons of almond extract until fully combined.
- Gradually add the flour mixture in increments of 1/2 cup, mixing well after each addition.
- Roll about 1 tablespoon of dough into small balls and flatten them into disks.
- Arrange the shaped dough onto the prepared baking sheet, spacing them evenly.
- Bake for 8 minutes. Remove from the oven and let rest on the baking sheet for 5 minutes.
- Transfer the cookies to a wire rack to cool completely.
- In a small bowl, whisk together powdered sugar, 1 tablespoon of milk, and 1 teaspoon of almond extract until smooth.
- Spread the icing over each cooled cookie and allow it to set for about 10 minutes.
- Store the iced cookies in the refrigerator.
