Easy Apple Pie Egg Rolls with a crispy shell and sweet cinnamon-apple filling.
Ingredients

- 3 Medium Apples; peeled, cored, and diced small
- 3 tsp Cane Sugar
- 1 tsp Cinnamon
- ½ Lemon, juiced
- 12 Egg Roll Wrappers
- As needed Oil, for frying
- Optional: Powdered Sugar, for dusting
Instructions
- Peeled, cored, and diced the apples into small, uniform pieces. Toss with cane sugar, cinnamon, and lemon juice. Let sit for 10 minutes.
- Lay a wrapper flat in a diamond shape. Place about 2 tablespoons of the apple mixture in the center.
- Fold the bottom corner up over the filling. Fold the side corners in to create an envelope shape. Roll tightly away from you and seal with water.
- Heat 2 inches of oil to 350°F (175°C). Fry 3-4 egg rolls for 4-5 minutes until golden brown. Drain on paper towels.
- Preheat oven to 425°F (220°C). Place egg rolls seam-side down on a greased baking sheet. Brush or spray tops with oil. Bake for 10-15 minutes until browned.
- Dust warm egg rolls with powdered sugar and serve immediately.
