Easy no bake pumpkin cheesecake bars with a graham cracker crust and spiced pumpkin swirls.

- 1 ½ cups graham cracker crumbs
- 5 tablespoons melted butter
- 2 tablespoons brown sugar
- 16 ounces cream cheese, softened
- 1 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 cup heavy whipping cream
- ¾ cup pumpkin puree
- 1 teaspoon pumpkin pie spice
Instructions
- In a bowl, mix graham cracker crumbs, brown sugar, and melted butter until combined. Press into an 8×8-inch pan and chill.
- Beat softened cream cheese with powdered sugar and vanilla until smooth.
- Whip heavy cream in a separate bowl until stiff peaks form.
- Gently fold the whipped cream into the cream cheese mixture.
- In a small bowl, combine pumpkin puree with pumpkin pie spice and a spoonful of the cheesecake mixture.
- Spread cheesecake layer evenly over crust. Add spoonfuls of pumpkin mixture on top and swirl with a knife.
- Cover and chill for at least 6 hours or overnight.
- Slice into bars and serve chilled.

- Top with whipped cream if desired.
