Delicious Loaded Baked Potato Pizza: A Unique Take on Pizza with Crispy Potatoes

- 1 pizza dough (store-bought or homemade)
- 2 medium potatoes, thinly sliced
- 1 tablespoon olive oil
- Salt and pepper, to taste
- 1/2 cup shredded mozzarella cheese
- 1/2 cup shredded cheddar cheese
- 1/2 cup sour cream (for topping)
- 4 strips of cooked bacon, crumbled (or vegetarian bacon for a veggie version)
- 2 tablespoons chopped green onions
- Optional: drizzle of ranch dressing or olive oil for extra flavor
Instructions
- Preheat the oven to 400°F (200°C). Slice the potatoes thinly and toss them in olive oil, salt, and pepper. Arrange the slices in a single layer on a baking sheet and roast for 15-20 minutes until tender and lightly browned. Set aside.
- Roll out your pizza dough on a floured surface to the desired size. Transfer it to a pizza stone or baking sheet lined with parchment paper.
- Spread a thin layer of sour cream over the pizza dough. Layer the roasted potato slices, then sprinkle with mozzarella and cheddar cheese. Add crumbled bacon (or veggie alternative).
- Bake the pizza for 10-12 minutes, or until the cheese is melted and bubbly and the crust is golden brown.
- Remove from the oven and top with chopped green onions and a dollop of sour cream. Optionally, drizzle with ranch dressing or olive oil.
