- 1 cup Roma tomatoes (diced, cored, and seeded)
- 3/4 cup black beans (drained and rinsed)
- 1/2 cup corn kernels (fresh, frozen, or canned)
- 1/4 cup red onion (finely chopped)
- 2 tablespoons jalapeno (seeds and ribs removed, minced)
- 1/4 teaspoon garlic (minced)
- 1/3 cup fresh cilantro leaves (chopped)
- Juice of 1 lime
- Salt (to taste)
Instructions
- Prepare the Tomatoes: Wash the tomatoes, remove cores, slice in half, scoop out seeds, and dice into small pieces. Place in a mixing bowl.
- Rinse and Drain the Black Beans: Rinse the black beans under cold water and drain. Fold into the bowl with the tomatoes.
- Prep the Corn Kernels: Measure corn, cook if fresh, and add to the mixture.
- Chop the Red Onion: Finely chop the red onion and add to the bowl.
- Prepare the Jalapeno: Mince the jalapeno and mix into the bowl.
- Mince the Garlic: Mince garlic and sprinkle over the salsa mixture. Fold gently.
- Chop and Add the Cilantro: Chop cilantro leaves and stir into the mixture.
- Squeeze the Lime Juice: Squeeze lime juice over the salsa and fold in.
- Season with Salt: Add salt to taste and stir gently.
- Let Flavors Meld: Cover and let sit for 20 minutes. Refrigerate if not serving immediately.
- Serve and Enjoy: Transfer to a serving bowl and enjoy with tortilla chips, tacos, or grilled meats.
