  • 1 cup Roma tomatoes (diced, cored, and seeded)
  • 3/4 cup black beans (drained and rinsed)
  • 1/2 cup corn kernels (fresh, frozen, or canned)
  • 1/4 cup red onion (finely chopped)
  • 2 tablespoons jalapeno (seeds and ribs removed, minced)
  • 1/4 teaspoon garlic (minced)
  • 1/3 cup fresh cilantro leaves (chopped)
  • Juice of 1 lime
  • Salt (to taste)

Instructions

  1. Prepare the Tomatoes: Wash the tomatoes, remove cores, slice in half, scoop out seeds, and dice into small pieces. Place in a mixing bowl.
  2. Rinse and Drain the Black Beans: Rinse the black beans under cold water and drain. Fold into the bowl with the tomatoes.
  3. Prep the Corn Kernels: Measure corn, cook if fresh, and add to the mixture.
  4. Chop the Red Onion: Finely chop the red onion and add to the bowl.
  5. Prepare the Jalapeno: Mince the jalapeno and mix into the bowl.
  6. Mince the Garlic: Mince garlic and sprinkle over the salsa mixture. Fold gently.
  7. Chop and Add the Cilantro: Chop cilantro leaves and stir into the mixture.
  8. Squeeze the Lime Juice: Squeeze lime juice over the salsa and fold in.
  9. Season with Salt: Add salt to taste and stir gently.
  10. Let Flavors Meld: Cover and let sit for 20 minutes. Refrigerate if not serving immediately.
