Instructions
- Peel and grate the carrots. Dice the apples into small bite-sized pieces. Finely chop celery if using.
- In a small bowl, whisk together mayonnaise, lemon juice, sugar, salt, and black pepper until smooth.
- In a large bowl, add carrots, apples, celery, and any optional add-ins.
- Pour dressing over the salad and toss gently until evenly coated.
- Refrigerate for at least 30 minutes to allow flavors to meld.
- Stir lightly and serve chilled.
