Ingredients

  • 34 boneless, skinless chicken breasts (about 1 pound)
  • 8 oz fresh cremini or button mushrooms, sliced
  • 8 oz fettuccine or spaghetti
  • 1 cup heavy cream
  • 1/2 cup freshly grated Parmesan cheese
  • 3 cloves garlic, minced
  • 2 tbsp olive oil
  • Salt & pepper to taste
  • 1 cup low-sodium chicken broth

Instructions

  1. Prepare Ingredients: Chop the garlic and slice the mushrooms.
  2. Cook Pasta: In a large pot of salted boiling water, cook pasta until al dente according to package instructions. Reserve 1 cup of pasta water before draining.
  3. Sauté Chicken: Heat olive oil in a large skillet over medium heat. Season chicken with salt and pepper, then cook for about 5-7 minutes on each side until golden brown. Remove from the skillet and set aside.
  4. Sauté Mushrooms & Garlic: In the same skillet, add more olive oil if needed. Sauté mushrooms and garlic for about 5 minutes until soft and golden.
  5. Make Sauce: Pour in chicken broth and heavy cream, stirring to combine while scraping any bits from the pan. Simmer for about 5 minutes until slightly thickened.
  6. Combine Everything: Return the chicken to the skillet along with drained pasta. Toss to coat everything in sauce, adding reserved pasta water as needed for desired consistency.
