Delicious Chicken and Mushroom Pasta
Ingredients

- 3–4 boneless, skinless chicken breasts (about 1 pound)
- 8 oz fresh cremini or button mushrooms, sliced
- 8 oz fettuccine or spaghetti
- 1 cup heavy cream
- 1/2 cup freshly grated Parmesan cheese
- 3 cloves garlic, minced
- 2 tbsp olive oil
- Salt & pepper to taste
- 1 cup low-sodium chicken broth
Instructions
- Prepare Ingredients: Chop the garlic and slice the mushrooms.
- Cook Pasta: In a large pot of salted boiling water, cook pasta until al dente according to package instructions. Reserve 1 cup of pasta water before draining.
- Sauté Chicken: Heat olive oil in a large skillet over medium heat. Season chicken with salt and pepper, then cook for about 5-7 minutes on each side until golden brown. Remove from the skillet and set aside.
- Sauté Mushrooms & Garlic: In the same skillet, add more olive oil if needed. Sauté mushrooms and garlic for about 5 minutes until soft and golden.
- Make Sauce: Pour in chicken broth and heavy cream, stirring to combine while scraping any bits from the pan. Simmer for about 5 minutes until slightly thickened.
- Combine Everything: Return the chicken to the skillet along with drained pasta. Toss to coat everything in sauce, adding reserved pasta water as needed for desired consistency.
