- 3/4 cup unsweetened cocoa powder

- 3/4 cup unsalted butter, at room temperature

- 3 large eggs
- 2 teaspoons vanilla extract
- 1 cup whole milk
- 1 cup green candy melts
- 1 cup pretzel sticks
- Assorted sprinkles
- 2 cups shredded sweetened coconut flakes
- 1/4 cup unsalted butter, softened
- 3 ounces cream cheese, softened
- 1 teaspoon vanilla extract
- 2 cups powdered sugar
Instructions
- Preheat your oven to 350°F (175°C) and line a muffin pan with baking cups.
- In a medium bowl, whisk together the all-purpose flour, unsweetened cocoa powder, baking soda, baking powder, and salt. Set aside.
- Using a stand mixer, cream the unsalted butter and sugar together on medium speed for about 2 minutes.
- Add the eggs one at a time, beating well after each addition. Scrape down the bowl as needed. Add the vanilla extract.
- Alternately add the flour mixture and whole milk, beginning and ending with the flour mixture. Mix until just combined.
- Scoop the batter into the prepared baking cups. Bake for 18 to 22 minutes, until a toothpick comes out clean.
- Remove cupcakes from the oven and cool completely on a wire rack.
- Melt the green candy melts according to package instructions. Pipe over pretzel sticks in the shape of Christmas trees and sprinkle with assorted sprinkles. Refrigerate until hardened.
- In a clean stand mixer bowl, cream together softened butter and cream cheese until smooth. Add vanilla extract and powdered sugar, mixing until combined.
- Spread frosting on top of each cooled cupcake. Sprinkle shredded coconut flakes over the frosting. Insert candy melt pretzel trees into the cupcakes.
- Serve immediately or store in an airtight container until ready to enjoy.
