  • 2 cups all-purpose flour
  • 3/4 cup unsweetened cocoa powder
  • 1 teaspoon baking soda
  • 3/4 teaspoon baking powder
  • 1/2 teaspoon salt
  • 3/4 cup unsalted butter, at room temperature
  • 2 cups sugar
  • 3 large eggs
  • 2 teaspoons vanilla extract
  • 1 cup whole milk
  • 1 cup green candy melts
  • 1 cup pretzel sticks
  • Assorted sprinkles
  • 2 cups shredded sweetened coconut flakes
  • 1/4 cup unsalted butter, softened
  • 3 ounces cream cheese, softened
  • 1 teaspoon vanilla extract
  • 2 cups powdered sugar

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin pan with baking cups.
  2. In a medium bowl, whisk together the all-purpose flour, unsweetened cocoa powder, baking soda, baking powder, and salt. Set aside.
  3. Using a stand mixer, cream the unsalted butter and sugar together on medium speed for about 2 minutes.
  4. Add the eggs one at a time, beating well after each addition. Scrape down the bowl as needed. Add the vanilla extract.
  5. Alternately add the flour mixture and whole milk, beginning and ending with the flour mixture. Mix until just combined.
  6. Scoop the batter into the prepared baking cups. Bake for 18 to 22 minutes, until a toothpick comes out clean.
  7. Remove cupcakes from the oven and cool completely on a wire rack.
  8. Melt the green candy melts according to package instructions. Pipe over pretzel sticks in the shape of Christmas trees and sprinkle with assorted sprinkles. Refrigerate until hardened.
  9. In a clean stand mixer bowl, cream together softened butter and cream cheese until smooth. Add vanilla extract and powdered sugar, mixing until combined.
  10. Spread frosting on top of each cooled cupcake. Sprinkle shredded coconut flakes over the frosting. Insert candy melt pretzel trees into the cupcakes.
  11. Serve immediately or store in an airtight container until ready to enjoy.
