  • 1 cup Medjool dates, pitted (soaked in warm water for 10 minutes if dry, then drained)
  • 1/2 cup unsweetened shredded coconut (reserve some for rolling)
  • 2 tablespoons cocoa powder
  • 1/2 cup almonds or walnuts, finely chopped or ground
  • 1 teaspoon vanilla extract
  • Pinch of sea salt

Instructions

  1. Pit your Medjool dates if they aren’t already pitted. Soak dry dates in warm water for 10 minutes to soften, then drain.
  2. In a food processor, add softened dates, cocoa powder, shredded coconut (reserving some for rolling), chopped nuts, vanilla extract, and a pinch of sea salt. Pulse until the mixture starts to come together but remains slightly chunky.
  3. Roll the mixture into small, bite-sized balls. If sticky, wet your hands or chill the dough in the fridge for 10 minutes.
  4. Roll each ball in reserved shredded coconut or any other coating of your choice.
  5. Chill the Chocolate Coconut Date Balls in the fridge for at least 30 minutes to firm up and enhance the flavor.
