Chocolate Coconut Date Balls are a healthy, no-bake snack blending the natural caramel sweetness of Medjool dates with rich cocoa, shredded coconut, and crunchy nuts. These easy-to-make energy bites provide a perfect balance of flavors and textures.

- 1 cup Medjool dates, pitted (soaked in warm water for 10 minutes if dry, then drained)
- 1/2 cup unsweetened shredded coconut (reserve some for rolling)
- 2 tablespoons cocoa powder
- 1/2 cup almonds or walnuts, finely chopped or ground
- 1 teaspoon vanilla extract
- Pinch of sea salt
Instructions
- Pit your Medjool dates if they aren’t already pitted. Soak dry dates in warm water for 10 minutes to soften, then drain.
- In a food processor, add softened dates, cocoa powder, shredded coconut (reserving some for rolling), chopped nuts, vanilla extract, and a pinch of sea salt. Pulse until the mixture starts to come together but remains slightly chunky.
- Roll the mixture into small, bite-sized balls. If sticky, wet your hands or chill the dough in the fridge for 10 minutes.
- Roll each ball in reserved shredded coconut or any other coating of your choice.
- Chill the Chocolate Coconut Date Balls in the fridge for at least 30 minutes to firm up and enhance the flavor.
