Instructions
- In a large bowl, whisk together the flour, baking powder, salt, and sugar until well combined.
- In another bowl, mix together the coconut milk, melted coconut oil, and vanilla extract.
- Slowly pour the wet ingredients into the dry ingredients, stirring gently until just combined.
- Heat a non-stick skillet or griddle over medium heat until hot.
- Pour 1/4 cup of the batter onto the skillet for each pancake.
- Cook until bubbles appear on the surface of the pancakes, then flip and cook until golden brown on the other side.
- Serve warm, topped with toasted coconut, fresh fruit, and your choice of syrup.
