- 1 cup Medjool dates, pitted
- 1 cup shredded coconut
- 3/4 cup raw almonds
- 1 tablespoon chia seeds
- 1 tablespoon lemon zest (fresh)
- 2 tablespoons lemon juice (fresh)
- 1 teaspoon vanilla extract
- Pinch of sea salt
Instructions
- Pit the Medjool dates and soak them in warm water for about 10 minutes if they are not very soft to help them blend smoothly.
- In a food processor, pulse the raw almonds and chia seeds until they break down into small crumbs but not a fine powder to maintain a pleasant texture.
- Add the softened dates, shredded coconut, lemon zest, lemon juice, vanilla extract, and a pinch of sea salt to the food processor. Blend all ingredients together until the mixture clings together when pressed.
- Using your hands, scoop out small amounts of the mixture and roll into golf ball-sized rounds. If the mixture feels too sticky, refrigerate it for 10 minutes before rolling.
- Place the formed energy balls in an airtight container and refrigerate for at least 30 minutes to firm up before enjoying.
