This cowboy caviar is fresh, colorful, and packed with bold, zesty flavor. Loaded with beans, veggies, and a tangy lime dressing, it’s easy to make ahead and perfect for parties, potlucks, and game days.
Ingredients

- 4 large Roma tomatoes (seeded and diced)
- ½ red onion (diced)
- 15 oz can black beans (rinsed and drained)
- 15 oz can black eyed peas (rinsed and drained)
- 10 oz package frozen corn kernels (thawed)
- 1 green bell pepper (seeded and diced)
- 1–2 jalapenos (seeded and diced)
- 1 bunch cilantro (chopped)
- ⅓ cup olive oil
- 1 tablespoon white wine vinegar
- 1 tablespoon granulated sugar
- 1 lime (juiced)
- ½ teaspoon chili powder
- ¼ teaspoon garlic powder
- ¼ teaspoon cayenne pepper (optional for more spice)
- Salt and pepper (to taste)
Instructions
- Add all of the dressing ingredients to a small bowl and whisk until well combined. Give it a quick taste and adjust as needed.
- In a large bowl, add all of the cowboy caviar ingredients.
- Pour the dressing over the top and toss everything together until evenly coated.
- Cover and refrigerate until ready to serve. Serve with tortilla chips.
