- 1 cup fresh cranberries (or 1/2 cup dried cranberries)
- 1 cup Brie cheese, rind removed and cut into small pieces
- 1/2 cup cream cheese, softened
- 1/4 cup chopped fresh parsley
- 1 tablespoon honey
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
- 4 boneless, skinless chicken breasts
- 2 tablespoons olive oil
- 1/2 cup chicken broth
- 1 tablespoon balsamic vinegar (optional)
Instructions
- In a medium bowl, mix the fresh cranberries (or dried cranberries) with the softened cream cheese and Brie cheese. Blend until well incorporated.
- Add the chopped parsley, honey, garlic powder, onion powder, salt, and pepper to the bowl. Stir until evenly mixed.
- Preheat your oven to 375°F (190°C).
- Place each chicken breast between two sheets of plastic wrap. Use a meat mallet or rolling pin to gently pound each piece to an even thickness of about 1/2 inch.
- Season both sides of the chicken breasts with salt and pepper to taste.
- Take a generous scoop of the cranberry and cheese mixture and place it in the center of each chicken breast. Be cautious not to overfill.
- Fold the sides of the chicken breast over the filling and then roll it tightly from the bottom to the top. Secure each roll with toothpicks or kitchen twine.
- In a large oven-safe skillet, heat the olive oil over medium-high heat. Once hot, carefully add the stuffed chicken breasts seam-side down. Sear for about 3-4 minutes until golden brown.
- Using tongs, flip the chicken breasts and sear the other side for an additional 3-4 minutes.
- Pour the chicken broth into the skillet. You can drizzle balsamic vinegar over the chicken for extra flavor if desired.
- Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the chicken reaches an internal temperature of 165°F (75°C).
- Once cooked, remove the skillet from the oven and let the chicken rest for about 5 minutes.
- Carefully take out the toothpicks or twine from the chicken rolls and slice each stuffed chicken breast into medallions.
- Serve the cranberry Brie stuffed chicken warm, drizzled with the pan juices, and garnish with extra chopped parsley.
