Description

  • 1 cup fresh cranberries (or 1/2 cup dried cranberries)
  • 1 cup Brie cheese, rind removed and cut into small pieces
  • 1/2 cup cream cheese, softened
  • 1/4 cup chopped fresh parsley
  • 1 tablespoon honey
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 4 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 1/2 cup chicken broth
  • 1 tablespoon balsamic vinegar (optional)

Instructions

  1. In a medium bowl, mix the fresh cranberries (or dried cranberries) with the softened cream cheese and Brie cheese. Blend until well incorporated.
  2. Add the chopped parsley, honey, garlic powder, onion powder, salt, and pepper to the bowl. Stir until evenly mixed.
  3. Preheat your oven to 375°F (190°C).
  4. Place each chicken breast between two sheets of plastic wrap. Use a meat mallet or rolling pin to gently pound each piece to an even thickness of about 1/2 inch.
  5. Season both sides of the chicken breasts with salt and pepper to taste.
  6. Take a generous scoop of the cranberry and cheese mixture and place it in the center of each chicken breast. Be cautious not to overfill.
  7. Fold the sides of the chicken breast over the filling and then roll it tightly from the bottom to the top. Secure each roll with toothpicks or kitchen twine.
  8. In a large oven-safe skillet, heat the olive oil over medium-high heat. Once hot, carefully add the stuffed chicken breasts seam-side down. Sear for about 3-4 minutes until golden brown.
  9. Using tongs, flip the chicken breasts and sear the other side for an additional 3-4 minutes.
  10. Pour the chicken broth into the skillet. You can drizzle balsamic vinegar over the chicken for extra flavor if desired.
  11. Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the chicken reaches an internal temperature of 165°F (75°C).
  12. Once cooked, remove the skillet from the oven and let the chicken rest for about 5 minutes.
  13. Carefully take out the toothpicks or twine from the chicken rolls and slice each stuffed chicken breast into medallions.
  14. Serve the cranberry Brie stuffed chicken warm, drizzled with the pan juices, and garnish with extra chopped parsley.
