Ingredients

  • 1 lb ground beef
  • 1/4 cup breadcrumbs
  • 1/4 cup Parmesan cheese, grated
  • 1 egg
  • 2 cloves garlic, minced
  • 1/4 cup fresh parsley, chopped
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 tbsp olive oil
  • 1 onion, chopped
  • 4 cups beef broth
  • 1 cup heavy cream
  • 1 cup small pasta (like ditalini or orzo)
  • 1 cup fresh spinach, chopped
  • to taste salt and pepper

Instructions

  1. In a large bowl, combine ground beef, breadcrumbs, Parmesan, egg, garlic, parsley, salt, and pepper. Mix well and form into small meatballs.
  2. Heat olive oil in a large pot over medium heat. Cook meatballs until browned on all sides. Remove meatballs and set aside.
  3. In the same pot, add onion and garlic. Sauté until softened.
  4. Add beef broth and bring to a boil.
  5. Stir in pasta and cook until al dente according to package instructions.
  6. Return meatballs to the pot and simmer until cooked through, about 10 minutes.
  7. Stir in heavy cream and spinach. Cook until spinach is wilted and soup is heated through.
  8. Season with salt and pepper to taste. Serve hot.
