  • 1/2 teaspoon freshly ground black pepper
  • 1 teaspoon smoked paprika
  • 1 tablespoon all-purpose flour
  • 1 cup vegetable broth
  • 1/2 cup dry white wine
  • 1 tablespoon Dijon mustard
  • 3/4 cup sour cream (or full-fat Greek yogurt)
  • 2 tablespoons fresh parsley, chopped
  • 8 ounces cooked egg noodles, rice, or mashed potatoes, for serving

Instructions

  1. Heat the butter and olive oil in a large skillet over medium heat.
  2. Add the chopped onion and cook, stirring occasionally, until softened and translucent, about 5 minutes.
  3. Stir in the minced garlic and cook for 30 seconds until fragrant.
  4. Add the sliced mushrooms, salt, and pepper. Cook, stirring occasionally, until the mushrooms release their moisture and turn golden brown, 8–10 minutes.
  5. Sprinkle the smoked paprika and flour over the mushrooms and stir to coat evenly. Cook for 1 minute to remove the raw flour taste.
  6. Pour in the vegetable broth and white wine (if using), scraping up any browned bits from the bottom of the pan. Stir in the Dijon mustard.
  7. Bring the mixture to a gentle simmer and cook for 5–7 minutes, until the sauce slightly thickens.
  8. Reduce the heat to low. Stir a few spoonfuls of the hot sauce into the sour cream to temper it, then add the tempered sour cream back into the pan, stirring until smooth and creamy. Do not boil after adding sour cream.
  9. Taste and adjust seasoning with additional salt and pepper if needed. Stir in the chopped parsley.
  10. Serve the creamy mushroom stroganoff over hot cooked egg noodles, rice, or mashed potatoes.
