  • 1 can (15 oz) kidney beans, drained (Any type of beans can be used.)
  • 1 can (15 oz) diced tomatoes, undrained
  • 1 can (15 oz) corn, drained
  • 1 medium onion, chopped
  • 2 cups beef broth (Can use vegetable broth for a vegetarian option.)
  • 1 cup diced potatoes (Any type of potatoes work well.)
  • 1 teaspoon garlic powder
  • 1 teaspoon salt (Adjust to taste.)
  • 1 teaspoon pepper (Adjust to taste.)
  • 1 teaspoon chili powder (Can reduce or omit for a milder flavor.)

Instructions

  1. In a skillet, brown the ground beef and chopped onion over medium heat until the beef is no longer pink. Drain any excess fat.
  2. Transfer the beef and onion mixture to your slow cooker.
  3. Add the drained kidney beans, undrained diced tomatoes, drained corn, beef broth, diced potatoes, and all seasonings to the slow cooker.
  4. Stir well to combine all ingredients thoroughly.
  5. Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the potatoes are tender.
  6. Serve hot, optionally topping with cheese or sour cream, and enjoy!
