- 1 pound ground beef (Can substitute with ground turkey or chicken.)
- 1 can (15 oz) kidney beans, drained (Any type of beans can be used.)
- 1 can (15 oz) diced tomatoes, undrained
- 1 can (15 oz) corn, drained
- 1 medium onion, chopped
- 2 cups beef broth (Can use vegetable broth for a vegetarian option.)
- 1 cup diced potatoes (Any type of potatoes work well.)
- 1 teaspoon garlic powder
- 1 teaspoon salt (Adjust to taste.)
- 1 teaspoon pepper (Adjust to taste.)
- 1 teaspoon chili powder (Can reduce or omit for a milder flavor.)
Instructions
- In a skillet, brown the ground beef and chopped onion over medium heat until the beef is no longer pink. Drain any excess fat.
- Transfer the beef and onion mixture to your slow cooker.
- Add the drained kidney beans, undrained diced tomatoes, drained corn, beef broth, diced potatoes, and all seasonings to the slow cooker.
- Stir well to combine all ingredients thoroughly.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the potatoes are tender.
- Serve hot, optionally topping with cheese or sour cream, and enjoy!
