- 1 tablespoon olive oil
- 1 medium yellow onion, chopped
- 2 cloves garlic, minced
- 2 medium carrots, chopped
- 2 stalks celery, chopped
- 2 cans (28 ounces each) whole or crushed tomatoes
- 2 cups vegetable broth
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- 1 teaspoon salt
- ½ teaspoon black pepper
- ½ cup heavy cream (optional)
- 1 teaspoon sugar (optional)
Instructions
- Chop the onion, carrots, and celery. Mince the garlic.
- Add tomatoes, vegetables, garlic, broth, herbs, salt, and pepper to the Crockpot. Stir well.
- Cover and cook on low for 6–8 hours or high for 3–4 hours.
- Blend the soup using an immersion blender or in batches in a standard blender until smooth.
- Stir in heavy cream if using, and add sugar to balance acidity if desired.
- Taste and adjust seasoning.
- Serve hot, garnished with basil, cream swirl, or croutons if desired.
