Delicious Five Spice Roasted Duck with Sweet Tea Glaze

- 4–5 lbs Duck
- 2 tbsp Five Spice Powder
- 1 tbsp Salt
- 2 pcs Yellow Onions
- 3 pcs Shallots
- 15 sprigs Thyme
- ¼ cup Soy Sauce
- 1 tbsp Earl Grey Tea
- 2 tbsp Mirin
- 1 tbsp Rice Wine Vinegar
- 1 tsp Coriander Seeds
- 1 tsp Fennel
- 2 pcs Star Anise
Instructions
- Pat the duck dry with paper towels. Rub with five spice powder and salt. Marinate in the fridge overnight.
- Preheat the oven to 350°F (175°C) for optimal roasting.
- In a roasting pan, arrange onion chunks and thyme. Stuff shallots inside the duck.
- Place the duck over the onions and thyme. Cover loosely with aluminum foil and roast for 1.5 hours.
- Prepare the tea soy glaze by simmering ingredients in a saucepan until reduced by half.
- After 1.5 hours, remove foil and brush glaze over the duck. Continue baking uncovered for 30 minutes.
- Check internal temperature of the duck; it should reach 165°F (74°C). Let rest for 5 minutes before carving.
