Delicious Five Spice Roasted Duck with Sweet Tea Glaze


Ingredients

  • 45 lbs Duck
  • 2 tbsp Five Spice Powder
  • 1 tbsp Salt
  • 2 pcs Yellow Onions
  • 3 pcs Shallots
  • 15 sprigs Thyme
  • ¼ cup Soy Sauce
  • 1 tbsp Earl Grey Tea
  • 2 tbsp Mirin
  • 1 tbsp Rice Wine Vinegar
  • 1 tsp Coriander Seeds
  • 1 tsp Fennel
  • 2 pcs Star Anise

Instructions

  1. Pat the duck dry with paper towels. Rub with five spice powder and salt. Marinate in the fridge overnight.
  2. Preheat the oven to 350°F (175°C) for optimal roasting.
  3. In a roasting pan, arrange onion chunks and thyme. Stuff shallots inside the duck.
  4. Place the duck over the onions and thyme. Cover loosely with aluminum foil and roast for 1.5 hours.
  5. Prepare the tea soy glaze by simmering ingredients in a saucepan until reduced by half.
  6. After 1.5 hours, remove foil and brush glaze over the duck. Continue baking uncovered for 30 minutes.
  7. Check internal temperature of the duck; it should reach 165°F (74°C). Let rest for 5 minutes before carving.
