- 1.5 cups Fresh Strawberries (hulled and quartered)
- 0.25 cup Lime Juice (freshly squeezed)
- 0.25 cup Simple Syrup (or agave nectar for a healthier option, adjust to taste)
- 2 cups Sparkling Water (or Club Soda, chilled)
- 6–8 leaves Fresh Mint Leaves (plus extra for garnish)
- Ice Cubes (Enough to fill glasses)
Instructions
- In a small bowl, lightly muddle the quartered fresh strawberries.
- Add the freshly squeezed lime juice and simple syrup (or agave nectar) to the muddled strawberries. Stir well.
- Add the fresh mint leaves to the mixture. Gently muddle them a couple of times.
- Pour the mixture through a fine-mesh sieve into a pitcher or serving glasses. Press gently on the solids to extract liquid. Discard the solids.
- Fill serving glasses with ice cubes. Pour the strained mixture over the ice.
- Top off each glass with chilled sparkling water or club soda.
- Gently stir each mocktail and garnish with fresh mint leaves and a slice of strawberry. Serve immediately.
