Description

These Chinese-Style Fried Chicken Wings make the best appetizer or game-day snack and are easy to make. The crispy, golden exterior is just like Chinese takeout.


Ingredients

  • 10 whole chicken wings
  • Vegetable oil (for frying)
  • 2 teaspoons EACH: salt, garlic powder
  • 1 teaspoon sugar
  • ½ teaspoon EACH: white pepper, ground ginger, onion powder
  • ½ teaspoon sesame oil
  • 1 tablespoon flour
  • 2 tablespoons cornstarch
  • 2 tablespoons soy sauce
  • 1 tablespoon mirin
  • 1 egg (whisked well)

Instructions

  1. Add the dry ingredients to a small bowl and mix until well-combined.
  2. Add the wet ingredients to a medium bowl and mix to combine. Add the dry ingredients to it and whisk until smooth and combined.
  3. Transfer the marinade to a gallon freezer bag and add the chicken. Seal out the air and rub the marinade all over the chicken.
  4. Refrigerate for 1 hour (or overnight). Remove from the fridge and transfer to a large bowl, getting as much of the batter into the bowl as possible. Let it sit at room temperature for 1 hour prior to frying.
  5. If there is any excess liquid at the bottom of the bowl, add up to 1/3 cup flour and toss to coat until there is no liquid left and all of the wings are coated in a thin, sticky batter.
  6. If possible, set cooling racks over a baking sheet to place the chicken on after frying.
  7. Add enough oil to a pot to cover the wings by an inch or so and heat it to 325° F degrees.
  8. Fry the chicken in batches for about 5 minutes per batch, until lightly browned. Transfer to a wire cooling rack or paper towel lined plate.
  9. Increase the heat of the oil to 350 to 365° F. Fry each batch again for 3-5 minutes, until golden. Remove and set aside.

  • Mirin can be substituted with rice vinegar and sugar.
