Delicious Funfetti Cookies filled with colorful sprinkles and white chocolate chips.
Ingredients

- ½ cup unsalted butter (softened)
- ¾ cup brown sugar
- ¼ cup white sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 2 cups flour
- ½ teaspoon salt
- ½ teaspoon baking powder
- 1 ½ cups funfetti white chocolate chips
- Colored sprinkles
Instructions
- Cream together the butter and both sugars until fluffy.
- Beat in the egg and vanilla.
- Add the flour, baking powder and salt.
- Mix until just everything is combined.
- The dough will be very crumbly.
- Stir in the chocolate chips.
- Divide the dough into 6 equal portions and form each portion into a ball. Just until it comes together.
- Press the sprinkles all over the top and sides of the cookies.
- Refrigerate for at least 30 minutes.
- Preheat the oven to 375 degrees while the dough chills.
- Bake the cookies for 18 minutes.
- Let the cookies sit on the baking sheet for 5 minutes then transfer to a cooling rack.
- Enjoy!
Notes
- For best results, chill the dough.
- Store cookies in an airtight container.
- Can substitute chocolate chips for funfetti chips.
