Instructions

  1. Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper for easier cleanup.
  2. Wash and scrub the Yukon Gold potatoes. Cut them into uniform 1-inch cubes. Peeling carrots is optional; if you peel them, cut them into 1-inch chunks. Trim the ends off the zucchini and cut it into 1-inch chunks.
