- 1 pound carrots (peeled and cut into 1-inch chunks)

- 4 cloves garlic (minced)
- 1 teaspoon dried rosemary
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- 1/2 teaspoon salt (or to taste)
- 1/4 teaspoon black pepper (or to taste)
- Fresh parsley (chopped, for garnish, optional)
Instructions
- Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper for easier cleanup.
- Wash and scrub the Yukon Gold potatoes. Cut them into uniform 1-inch cubes. Peeling carrots is optional; if you peel them, cut them into 1-inch chunks. Trim the ends off the zucchini and cut it into 1-inch chunks.
- In a large bowl, whisk together olive oil, minced garlic, dried rosemary, dried thyme, dried oregano, salt, and black pepper.
- Add the prepared potatoes, carrots, and zucchini to the bowl with the herb and garlic mixture. Toss gently until all vegetables are evenly coated.
- Spread the coated vegetables in a single layer on the prepared baking sheet. Avoid overcrowding the pan; use two sheets if necessary.
- Place the baking sheet in the preheated oven. Roast for 30-40 minutes, or until the potatoes are tender when pierced with a fork.
- About halfway through the roasting time, remove the baking sheet and gently toss the vegetables for even cooking.
- Once tender and caramelized, remove from the oven. Adjust salt and pepper if needed. Garnish with fresh parsley if desired.
