- 1 medium onion, diced
- 2 cloves garlic, minced
- 2 carrots, diced
- 2 celery stalks, diced
- 1 pound cooked chicken breast, shredded
- 4 cups low-sodium chicken broth
- 1 cup frozen peas
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 1 cup heavy cream or milk
- 1/4 cup all-purpose flour
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- In a large pot, heat the olive oil over medium heat.
- Add the diced onion, garlic, carrots, and celery, cooking until they are softened, which should take about 5-7 minutes.
- Stir in the shredded chicken, chicken broth, peas, thyme, and rosemary, then bring the mixture to a simmer.
- In a small bowl, whisk together the flour and heavy cream until the mixture is smooth.
- Gradually pour the cream mixture into the pot, stirring constantly to prevent lumps from forming.
- Allow the soup to simmer for an additional 10-15 minutes, until it thickens. Season with salt and pepper according to your taste.
- Serve the soup hot, garnished with fresh parsley.
