Ingredients

  • 8 oz (225g) semi-sweet or dark chocolate, finely chopped
  • 1/2 cup heavy cream
  • 1 tablespoon unsalted butter
  • 1 teaspoon vanilla extract
  • Pinch of salt
  • Unsweetened cocoa powder
  • Powdered sugar
  • Chopped nuts
  • Shredded coconut
  • Melted chocolate

Instructions

  1. Place chopped chocolate in a heatproof bowl.
  2. Heat heavy cream and butter in a small saucepan until just beginning to simmer.
  3. Pour hot cream over the chocolate. Let sit for 2 minutes.
  4. Stir gently until smooth and glossy.
  5. Mix in vanilla extract and salt.
  6. Cover and refrigerate for 2–3 hours, or until firm enough to scoop.
  7. Scoop small portions and roll into balls using your hands.
  8. Roll truffles in desired coatings.
  9. Store refrigerated until ready to serve.
