- 1/2 cup unsalted butter (melted; coconut oil as dairy-free substitute)
- 1 cup brown sugar (or coconut sugar as a healthy alternative)
- 2 large eggs (room temperature)
- 1 teaspoon vanilla extract (opt for quality vanilla)
- 2 cups all-purpose flour (or half whole wheat flour for a healthier option)
- 1 teaspoon baking soda (for leavening)
- 1/2 teaspoon salt (to enhance flavor)
- 1 teaspoon cinnamon (optional, adds warmth)
- 1/2 cup chopped walnuts or chocolate chips (optional, for texture)
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×5-inch loaf pan or line it with parchment paper.
- Mash 3-4 very ripe bananas in a large mixing bowl until smooth.
- Add melted unsalted butter, brown sugar, eggs, and vanilla extract to the mashed bananas and mix until smooth.
- In a separate bowl, whisk together flour, baking soda, salt, and optional cinnamon, then fold into the banana mixture.
- If desired, fold in walnuts or chocolate chips.
- Pour the batter into the prepared loaf pan and bake for 55-65 minutes.
