- 1 pound Fresh Shrimp
- 3 cloves Garlic
- 1 cup Orzo Pasta
- 2 cups Spinach
- 1 whole Lemon (Zest & Juice)
- 2 tablespoons Butter
- 2 tablespoons Olive Oil
- 1 cup Pasta Water
Instructions
- Bring a large pot of salted water to a boil, then cook the orzo according to package instructions, typically about 8-10 minutes. Reserve 1 cup of pasta water before draining.
- In a large skillet over medium heat, melt 2 tablespoons of butter and 2 tablespoons of olive oil until shimmering, about 1-2 minutes.
- Add fresh shrimp in a single layer to the skillet, cooking for 2-3 minutes per side until pink and curled. Transfer to a plate to keep warm.
- In the same skillet, sauté minced garlic for about 30 seconds until fragrant and lightly golden.
- Add drained orzo, fresh spinach, lemon juice, and a splash of reserved pasta water, stirring until spinach wilts, about 2 minutes.
- Return cooked shrimp to skillet and sprinkle with fresh lemon zest, tossing to combine and warm for an additional minute.
- Remove from heat and serve immediately, garnished with extra lemon zest if desired.
