- 1½ cups (375g) Greek yogurt
- 3 medium eggs
- ¼ cup (60ml) olive oil
- 1 tsp vanilla extract
- ¾ cup (150g) erythritol
- 1¼ cups (150g) all-purpose flour
- 2 tsp baking powder
- ¼ tsp salt
- Zest of 1 lemon (optional)
Instructions
- Preheat the oven to 350°F (175°C). Line the bottom of a 9-inch round cake pan with parchment paper and lightly grease the sides.
- In a large mixing bowl, whisk together the Greek yogurt, eggs, olive oil, vanilla extract, and erythritol until smooth and creamy.
- In a separate bowl, sift or whisk together the flour, baking powder, salt, and lemon zest (if using).
- Gradually fold the dry ingredients into the wet ingredients using a spatula or wooden spoon.
- Pour the batter into the prepared cake pan and smooth the top with a spatula.
- Bake for 40–45 minutes or until the top is golden and a toothpick inserted in the center comes out clean.
- Let the cake cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.
