Instructions
- Prepare Pastry: In a large bowl, mix flour and sugar. Cut in cold butter until crumbly. Gradually add ice-cold water until dough forms. Chill for at least an hour.
- Make Filling: Combine dried fruits and spices in a bowl. Add a splash of brandy or orange juice if desired.
- Roll Out Dough: Preheat oven to 375°F (190°C). Roll half the chilled pastry to about an eighth-inch thick, cutting circles for muffin tin cups.
- Assemble Pies: Place circles in greased muffin tins, fill with fruit mixture, and top with another pastry circle.
- Bake: Brush tops with egg wash and bake for 20-25 minutes until golden brown.
