- 1 teaspoon baking powder

Instructions
- Cream together the softened butter and sugar until light and fluffy.
- Beat in the eggs one at a time until fully incorporated.
- Stir in the mashed ripe banana, drained crushed pineapple, and sweetened flaked coconut. Add pineapple extract if using.
- In a separate bowl, whisk together the all-purpose flour, baking powder, baking soda, and salt.
- Gradually stir the dry ingredients into the creamed mixture until just combined.
- Spoon the batter into a greased 8-inch by 4-inch loaf pan. Bake at 350°F (175°C) for 65-70 minutes.
- Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
