- 1 teaspoon Vanilla Extract (pure for best results)
- 1 teaspoon Rum Extract (or extra vanilla as substitute)
- 2 cups Powdered Sugar (essential for icing)
- 2 tablespoons Milk (whole milk recommended)
- 1 teaspoon Vanilla Extract
- ½ teaspoon Rum Extract
Instructions
- Whisk together the flour and nutmeg in a medium bowl. In a separate large bowl, cream the butter and sugar until light and fluffy. Add the egg, vanilla, and rum extracts, mixing until fully blended. Gradually blend in the dry ingredients until a smooth dough forms.
- On a floured surface, divide the dough and roll into logs about ½ inch in diameter. Cut into 2-inch pieces, placing them on a baking sheet with space to expand.
- Preheat oven to 350°F (175°C) and bake for 12-15 minutes, watching for light golden bottoms while leaving the tops slightly pale. Cool on the baking sheet for a few minutes, then transfer to a wire rack.
- Prepare the icing by whisking together powdered sugar, milk, vanilla, and rum extract until smooth. Adjust milk to reach the desired consistency.
- Once cookies are cool, drizzle or spread icing over each. Optionally, add a sprinkle of nutmeg or holiday sprinkles before the icing sets.
