Instructions

  1. Whisk together the flour and nutmeg in a medium bowl. In a separate large bowl, cream the butter and sugar until light and fluffy. Add the egg, vanilla, and rum extracts, mixing until fully blended. Gradually blend in the dry ingredients until a smooth dough forms.
  2. On a floured surface, divide the dough and roll into logs about ½ inch in diameter. Cut into 2-inch pieces, placing them on a baking sheet with space to expand.
  3. Preheat oven to 350°F (175°C) and bake for 12-15 minutes, watching for light golden bottoms while leaving the tops slightly pale. Cool on the baking sheet for a few minutes, then transfer to a wire rack.
