- 4 large egg whites, at room temperature
- 1 cup granulated sugar
- 1/4 teaspoon cream of tartar
- 1/4 teaspoon salt
- 1 teaspoon pure vanilla extract
- 1 tablespoon finely grated orange zest
- Additional orange zest, for garnish (optional)
Instructions
- Preheat oven to 225°F (110°C) and line two baking sheets with parchment paper. Ensure all bowls and tools are clean and grease-free.
- In a large mixing bowl, beat the egg whites and cream of tartar on medium speed until frothy and soft peaks form. Add salt.
- Gradually add the granulated sugar, 1 tablespoon at a time, beating on medium-high until glossy, stiff peaks form (about 5–8 minutes).
- Gently fold in the vanilla extract and orange zest until evenly combined.
- Transfer the meringue to a piping bag fitted with a star tip and pipe small swirls onto the baking sheets. Alternatively, spoon dollops for a rustic style.
- Bake for 1 hour and 15 minutes. Do not open the oven. Turn off the oven and let cookies cool completely inside for at least 1 hour.
- Once cooled, garnish with extra orange zest if desired. Store in an airtight container at room temperature.
