Description
High Protein No-Bake Cookies that taste just like regular no-bake cookies, using TVP instead of oats.
Ingredients

- 4 tbsp Vegan Butter
- 1 cup Sugar
- 1/4 cup Soy Milk
- 3 tbsp Cocoa Powder
- 1/4 cup Peanut Butter
- 1 tsp Vanilla Extract
- 2 1/2 cup TVP (Textured Vegetable Protein)
- 1/4 tsp Salt
Instructions
- In a medium bowl, mix the dried TVP with 1/2 cup of water. Allow this to soften for at least 15 minutes.
- In a large pot, add vegan butter, sugar, soy milk, cocoa powder, and salt. Melt everything down and mix.
- Bring to a hard boil for 3 minutes, while continuously stirring.
- Remove from heat.
- Add the vanilla extract and peanut butter. Stir well.
- Add the softened TVP to the mixture and stir until well coated.
- Drop 2 tbsp of the dough onto a parchment paper-lined baking sheet, resulting in about 20 cookies. Press the dough down to compact it.
- Refrigerate the cookies for 60 minutes.
Notes
- The cookies do not set up as well as traditional no-bake cookies made with oats.
- They are easy to prepare and make a great snack.
