Ingredients

  • 1 (5 lb) Prime Rib Roast
  • 3 tbsp Kosher Salt
  • 2 tsp Freshly Cracked Black Pepper
  • 2 tsp Garlic Powder
  • 2 tbsp Fresh Rosemary, chopped
  • 2 tbsp Fresh Thyme, chopped
  • 2 tbsp Olive Oil

Instructions

  1. Preheat oven to 225°F (107°C).
  2. Generously season the prime rib with salt, pepper, garlic powder, rosemary, and thyme. Massage the seasonings into the meat.
  3. Place the seasoned roast on a rack in a roasting pan and insert an instant-read thermometer into the thickest part of the meat.
  4. Roast in the oven until it reaches an internal temperature of 120°F (49°C), approximately 2 hours.
  5. Heat olive oil in a cast-iron skillet over high heat until shimmering.
  6. Transfer the roast to the hot skillet and sear each side for about 2 minutes until browned.
  7. Let rest for at least 20 minutes before slicing against the grain.
