- 1 (5 lb) Prime Rib Roast
- 3 tbsp Kosher Salt
- 2 tsp Freshly Cracked Black Pepper
- 2 tsp Garlic Powder
- 2 tbsp Fresh Rosemary, chopped
- 2 tbsp Fresh Thyme, chopped
- 2 tbsp Olive Oil
Instructions
- Preheat oven to 225°F (107°C).
- Generously season the prime rib with salt, pepper, garlic powder, rosemary, and thyme. Massage the seasonings into the meat.
- Place the seasoned roast on a rack in a roasting pan and insert an instant-read thermometer into the thickest part of the meat.
- Roast in the oven until it reaches an internal temperature of 120°F (49°C), approximately 2 hours.
- Heat olive oil in a cast-iron skillet over high heat until shimmering.
- Transfer the roast to the hot skillet and sear each side for about 2 minutes until browned.
- Let rest for at least 20 minutes before slicing against the grain.
