Description

A melty, spicy grilled cheese layered with roasted jalapeño dip and two cheeses for the ultimate comfort sandwich.


Ingredients

  • 3 jalapeños (roasted and chopped)
  • 4 oz cream cheese (softened)
  • 1 clove garlic (minced)
  • 1 tbsp lime juice
  • 0.25 tsp salt
  • 0.25 tsp black pepper
  • 0.25 tsp smoked paprika
  • 2 tbsp cilantro (optional, chopped)
  • 4 slices bread (sourdough or thick sliced)
  • 1 cup cheddar cheese (shredded)
  • 1 cup mozzarella or Monterey Jack (shredded)
  • 2 tbsp butter (softened)

Instructions

  1. Roast jalapeños until skins blister, then peel and chop.
  2. Mix jalapeños with cream cheese, garlic, lime juice, salt, pepper, smoked paprika, and cilantro.
  3. Butter one side of each bread slice.
  4. Spread jalapeño dip on the unbuttered sides of two slices.
  5. Top with cheddar and mozzarella, then with remaining bread slices.
  6. Heat a skillet on medium and cook sandwiches 3–4 minutes per side until golden and melted.
  7. Serve hot and enjoy the melty spicy goodness.
