- 2 large chicken breasts
- 1/2 medium onion
- 1 (10 oz) can Ro-tel diced tomatoes & green chilies
- 1 (14 oz) can black beans
- 1 (12 oz) can corn
- 2 tablespoons olive oil
- 1 cup Mexican cheese blend
- 1/2 teaspoon garlic powder
- 1/2 teaspoon chili powder
- Salt & pepper (to taste)
- 1/2 teaspoon smoked paprika
- Fresh cilantro (chopped, optional, to taste)
Instructions
- Preheat the oven to 400°F.
- Cut chicken breasts in half lengthwise and season with garlic powder, chili powder, salt, and pepper.
- In an oven-safe skillet over medium-high heat, sear the chicken for about 3-4 minutes on each side until golden.
- Sauté chopped onion in the same skillet until softened.
- Add Ro-tel tomatoes, black beans, corn, and smoked paprika; heat through.
- Return chicken to the skillet, spoon some mixture over it, and sprinkle with cheese.
- Bake in the oven for 5-7 minutes until the chicken reaches 165°F and cheese is melted.
