A hearty and comforting Scottish soup combining smoky ham and nutritious lentils.


Ingredients

  • 1 lb smoked ham bone or diced smoked ham
  • 1 cup brown or green lentils
  • 1 onion, chopped
  • 2 celery stalks, chopped
  • 2 carrots, diced
  • 2 cloves garlic, minced
  • 6 cups water or stock
  • to taste salt and pepper

Instructions

  1. Rinse lentils thoroughly under cold water.
  2. In a large pot, combine the ham bone (or diced ham), lentils, onion, celery, carrots, garlic, and water or stock.
  3. Bring to a boil, then reduce heat and simmer uncovered for about 1 hour or until lentils are tender.
  4. Remove the ham bone, shred any meat and return to the pot.
  5. Season the soup with salt and pepper to taste.
  6. Serve hot and enjoy your hearty Scottish ham and lentil soup.
