A hearty and comforting Scottish soup combining smoky ham and nutritious lentils.
Ingredients

- 1 lb smoked ham bone or diced smoked ham
- 1 cup brown or green lentils
- 1 onion, chopped
- 2 celery stalks, chopped
- 2 carrots, diced
- 2 cloves garlic, minced
- 6 cups water or stock
- to taste salt and pepper
Instructions
- Rinse lentils thoroughly under cold water.
- In a large pot, combine the ham bone (or diced ham), lentils, onion, celery, carrots, garlic, and water or stock.
- Bring to a boil, then reduce heat and simmer uncovered for about 1 hour or until lentils are tender.
- Remove the ham bone, shred any meat and return to the pot.
- Season the soup with salt and pepper to taste.
- Serve hot and enjoy your hearty Scottish ham and lentil soup.
