- 1.5 pounds boneless skinless chicken breasts
- 1 red bell pepper
- 1 yellow bell pepper
- 1 green bell pepper
- 1 large red onion
- 2 tablespoons olive oil
- 2 tablespoons fresh lime juice
- 2 tablespoons fajita seasoning
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 cup chopped fresh cilantro (optional)
- 8 small flour or corn tortillas
Instructions
- Preheat oven to 425°F (220°C).
- Slice chicken breasts, bell peppers, and red onion into thin, even strips.
- In a large bowl, toss chicken and vegetables with olive oil, fajita seasoning, salt, and pepper.
- Spread the mixture onto a large sheet pan in a single layer.
- Roast in the oven for 20-25 minutes, tossing halfway through, until chicken is cooked and edges are lightly charred.
- Squeeze fresh lime juice over the cooked fajitas.
- Sprinkle with chopped cilantro if using.
- Serve hot with warm tortillas and desired toppings.
