Description

Classic Amish-style glazed carrots made effortless in the slow cooker. Tender coins simmer in a honey–butter–thyme glaze with a hint of cinnamon and a splash of apple cider vinegar for balance. A kid-friendly, holiday-worthy side you can set and forget.


Ingredients

  • 2 lb carrots, peeled and cut into 1-inch pieces (rounds or bias-cut)
  • 1/4 cup honey (raw or clover)
  • 2 tbsp unsalted butter, melted
  • 1 tbsp apple cider vinegar
  • 1 tsp salt
  • 1/2 tsp ground black pepper (freshly cracked preferred)
  • 1/2 tsp dried thyme
  • 1/4 tsp ground cinnamon
  • fresh parsley, chopped (optional)

Instructions

  1. Prep Carrots: Peel and cut carrots into uniform 1-inch pieces. Add to the slow cooker.
  2. Whisk Glaze: In a bowl, whisk honey, melted butter, apple cider vinegar, salt, pepper, dried thyme, and cinnamon until smooth.
  3. Coat & Cook: Pour glaze over carrots and toss to coat. Cover and cook on LOW 4–5 hours, until fork-tender. Stir once halfway through.
  4. Finish: Transfer to a serving dish and garnish with chopped fresh parsley. Serve warm.
