  • 4 bone-in, skin-on chicken thighs
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • ½ cup unsalted butter, melted
  • 1 tablespoon garlic, minced
  • 1 tablespoon fresh parsley, chopped
  • 1 teaspoon thyme (optional)
  • 1 teaspoon lemon juice
  • ½ teaspoon paprika (optional)
  • 1 ½ pounds baby potatoes, halved or quartered
  • 1 tablespoon olive oil

Instructions

  1. Season chicken thighs with salt and pepper. Optionally, sear chicken in olive oil for 2-3 minutes per side to lock in flavor.
  2. Mix melted butter, minced garlic, parsley, thyme, lemon juice, and paprika in a bowl.
  3. Place halved potatoes in the Crock Pot, drizzle with olive oil, and season with salt and pepper. Lay chicken thighs on top and pour garlic butter sauce over everything.
  4. Cook on low for 6-7 hours or on high for 3-4 hours, until chicken reaches 165°F (75°C) and potatoes are tender.
  5. Remove chicken and potatoes from the slow cooker, serve with extra garlic butter sauce, and garnish with fresh parsley if desired.
