- 4 bone-in, skin-on chicken thighs
- 1 tablespoon olive oil
- Salt and pepper to taste
- ½ cup unsalted butter, melted
- 1 tablespoon garlic, minced
- 1 tablespoon fresh parsley, chopped
- 1 teaspoon thyme (optional)
- 1 teaspoon lemon juice
- ½ teaspoon paprika (optional)
- 1 ½ pounds baby potatoes, halved or quartered
- 1 tablespoon olive oil
Instructions
- Season chicken thighs with salt and pepper. Optionally, sear chicken in olive oil for 2-3 minutes per side to lock in flavor.
- Mix melted butter, minced garlic, parsley, thyme, lemon juice, and paprika in a bowl.
- Place halved potatoes in the Crock Pot, drizzle with olive oil, and season with salt and pepper. Lay chicken thighs on top and pour garlic butter sauce over everything.
- Cook on low for 6-7 hours or on high for 3-4 hours, until chicken reaches 165°F (75°C) and potatoes are tender.
- Remove chicken and potatoes from the slow cooker, serve with extra garlic butter sauce, and garnish with fresh parsley if desired.
