Ingredients

- 2–3 pounds Chicken Breasts or Thighs (Thighs recommended for tenderness)
- 1 medium Onion (Can substitute with shallots)
- 3 cloves Garlic (Minced)
- 1 cup Chicken Broth (Optional, but recommended)
- 1 juice of Lemon (Freshly squeezed preferred)
- ¼ cup Olive Oil (Avoid lighter oils)
- 2 teaspoons Dried Oregano
- 1 teaspoon Dried Thyme
- to taste Sea Salt
- to taste Black Pepper
Instructions
- Place 2-3 pounds of chicken breasts or thighs into the slow cooker.
- Thinly slice one medium onion and layer it on top of the chicken.
- Whisk together chicken broth, lemon juice, minced garlic, olive oil, oregano, thyme, salt, and pepper in a mixing bowl.
- Pour the prepared sauce over the chicken and onion layers in the slow cooker.
- Cover and set the slow cooker to LOW for 5-6 hours or HIGH for 3-4 hours.
- Once cooked, shred the chicken directly in the slow cooker using two forks.
- Serve warm over rice, pasta, or in pita, garnished with feta or fresh herbs.
