Instructions

  1. In a large pot, heat olive oil over medium heat until shimmering. Add diced onion and sauté for 5-7 minutes until translucent.
  2. Add minced garlic and grated ginger to the pot. Stir for about 1 minute until aromatic.
  3. Stir in chopped carrots and cook for an additional 5 minutes, stirring to coat.
  4. Pour in vegetable broth and bring to a gentle simmer. Cover and cook for 15-20 minutes until carrots are fork-tender.
  5. Remove from heat and use an immersion blender to purée the soup until smooth.
  6. In a small bowl, mix miso paste with a ladleful of hot soup to dissolve. Stir back into the pot.
  7. Stir in coconut milk and soy sauce, mixing until well combined.
  8. Adjust seasoning with salt and pepper, then let sit on low heat for a few minutes.
