Instructions
- In a large pot, heat olive oil over medium heat until shimmering. Add diced onion and sauté for 5-7 minutes until translucent.
- Add minced garlic and grated ginger to the pot. Stir for about 1 minute until aromatic.
- Stir in chopped carrots and cook for an additional 5 minutes, stirring to coat.
- Pour in vegetable broth and bring to a gentle simmer. Cover and cook for 15-20 minutes until carrots are fork-tender.
- Remove from heat and use an immersion blender to purée the soup until smooth.
- In a small bowl, mix miso paste with a ladleful of hot soup to dissolve. Stir back into the pot.
