- 2 tbsp Vegetable oil (Can substitute with canola or peanut oil.)
- 250 g Cherry tomatoes (Regular tomatoes work as a substitute.)
- 1 tbsp Chilli powder (Adjust based on spice preference.)
- 1 tbsp Sweet paprika (Contributes a mild sweetness.)
- 1 tbsp Ground Sichuan peppercorns (Omit for less spiciness.)
- 4 cloves Garlic (Finely chopped, fresh is preferred.)
- 4 cm Ginger (Provides warmth and depth.)
- 400 g Pork mince (Can substitute with chicken or turkey mince.)
- 400 g Hand Pulled Noodles (Homemade or store-bought.)
- 4 tbsp Oyster sauce
- 4 tbsp Soy sauce (Use low-sodium if necessary.)
- 2 tbsp Vinegar (Rice vinegar is recommended.)
- 1 tbsp Dark soy sauce
- 2 sprigs Finely sliced spring onion (Adds a fresh touch.)
Instructions
- Heat the vegetable oil in a large frying pan or wok over high heat until shimmering.
- Stir-fry the cherry tomatoes for about 3-4 minutes until they start to blister and soften.
- Add garlic and ginger, stirring for 20 seconds until fragrant.
- Sprinkle in chilli powder, paprika, and Sichuan peppercorns, stirring well to coat the tomatoes.
- Add the pork mince to the pan, stir-frying for 2-3 minutes until it’s no longer pink.
- Pour in the seasoning sauce and reduce the heat to medium-high, letting it simmer for 2-3 minutes.
- In a separate pot, bring water to a boil and cook the noodles until tender yet chewy.
- Transfer the noodles directly to the pork sauce and toss together.
- Serve in bowls and garnish with finely sliced spring onion.
