Description

These taco ranch bites are cheesy, savory, and made for sharing.


Ingredients

  • 1 lb ground beef
  • 2 tbsp taco seasoning
  • 1 tbsp ranch seasoning (or ranch dressing mix)
  • 1/4 cup water
  • 24 mini tortilla scoop chips (e.g. Tostitos Scoops)
  • 1 cup shredded cheddar or Mexican blend cheese
  • 1 small tomato (diced)
  • 2 tbsp chopped fresh cilantro
  • Sour cream
  • Guacamole
  • Salsa

Instructions

  1. Heat a skillet over medium heat and brown the ground beef until fully cooked. Drain off any excess fat.
  2. Add the taco seasoning, ranch seasoning, and water to the skillet. Stir to coat the beef, then let it simmer for 2–3 minutes until slightly thickened.
  3. Preheat the oven to 350°F (175°C). Arrange the tortilla scoop chips on a baking tray. Spoon the seasoned beef into each chip, then top with diced tomatoes and shredded cheese.
  4. Bake for 5–7 minutes, just until the cheese is melted and bubbly.
  5. Remove from the oven and finish with chopped cilantro. Serve warm with sour cream, guacamole, or salsa on the side.
