Ingredients

- 4 cups potatoes, peeled and diced
- 1 cup leeks, chopped
- 1 liter vegetable stock
- 1 cup cream
- 2 tablespoons butter
- to taste salt and pepper
- 1/4 cup chopped fresh parsley
Instructions
- Melt butter in a large pot over medium heat.
- Add the leeks and sauté until soft.
- Add diced potatoes and vegetable stock.
- Bring to a boil, then reduce heat and simmer for about 30 minutes, until potatoes are tender.
- Use an immersion blender to puree the soup until smooth.
- Stir in cream and season with salt and pepper to taste.
- Garnish with fresh parsley before serving.
