Ingredients

  • 1 cup leeks, chopped
  • 1 liter vegetable stock
  • 1 cup cream
  • 2 tablespoons butter
  • to taste salt and pepper
  • 1/4 cup chopped fresh parsley

Instructions

  1. Melt butter in a large pot over medium heat.
  2. Add the leeks and sauté until soft.
  3. Add diced potatoes and vegetable stock.
  4. Bring to a boil, then reduce heat and simmer for about 30 minutes, until potatoes are tender.
  5. Use an immersion blender to puree the soup until smooth.
  6. Stir in cream and season with salt and pepper to taste.
  7. Garnish with fresh parsley before serving.
