Turkey and Stuffing Roll Ups: The Ultimate Comfort Food Dinner

- 8 slices deli turkey, thick cut (ask for #4–#5 thickness)
- 1 1/2 cups chicken or turkey broth (low sodium works well)
- 1/4 cup unsalted butter
- 5 oz herbed seasoned stuffing mix (boxed)
- 1/2 cup dried cranberries (optional)
- 4 oz Swiss cheese, shredded
- 10.5 oz cream of chicken soup (can) (low sodium recommended)
- 12 oz turkey gravy (jar)
- fresh parsley, snipped (or extra cranberry sauce)
Instructions
- Preheat & Prep: Heat oven to 350°F (175°C). Grease a 9×13″ baking dish.
- Start Stuffing: In a saucepan, bring broth and butter to a boil. Add dried cranberries; simmer 30 seconds.
- Mix Stuffing: Stir in stuffing mix until moistened. Cover, remove from heat, and rest 5 minutes. Fluff, then fold in shredded Swiss.
- Assemble Rolls: Lay out 8 thick turkey slices. Spoon stuffing onto each, then roll up tightly. Place seam-side down in prepared dish.
- Make Sauce: In a bowl, whisk cream of chicken soup with turkey gravy until smooth. Pour evenly over roll-ups.
- Bake: Cover with foil and bake 30 minutes. Uncover and bake 10 minutes more, until bubbling and heated through. Garnish with parsley and serve hot.
