  • 2 cups mashed roasted sweet potatoes
  • 1 cup brown sugar
  • 1/2 cup unsalted butter, melted
  • 2/3 cup evaporated milk
  • 2 large eggs
  • 1 1/2 teaspoons vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon salt
  • 1 9-inch unbaked pie crust
  • Whipped cream, for topping (optional)

Instructions

  1. Preheat oven to 400°F (200°C). Wash and pierce sweet potatoes with a fork. Roast on a foil-lined baking sheet for 45–60 minutes or until fork-tender. Let cool, then scoop out flesh.
  2. While potatoes roast, roll out the pie crust and place in a 9-inch pie dish. Crimp the edges and refrigerate until filling is ready.
  3. In a large bowl, mash 2 cups of roasted sweet potatoes until smooth. Add brown sugar, melted butter, evaporated milk, eggs, vanilla, spices, and salt. Mix well until smooth.
  4. Pour filling into the chilled pie crust and smooth the top. Tap the dish on the counter to release air bubbles.
  5. Reduce oven temperature to 350°F (175°C). Bake for 50–60 minutes, or until center is just set and slightly jiggly.
  6. Let pie cool completely for at least 2 hours on a wire rack. Chill for cleaner slices if desired.
  7. Top with whipped cream and a sprinkle of cinnamon before serving.
