- 2 cups mashed roasted sweet potatoes
- 1 cup brown sugar
- 1/2 cup unsalted butter, melted
- 2/3 cup evaporated milk
- 2 large eggs
- 1 1/2 teaspoons vanilla extract
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/4 teaspoon ground ginger
- 1/4 teaspoon salt
- 1 9-inch unbaked pie crust
- Whipped cream, for topping (optional)
Instructions
- Preheat oven to 400°F (200°C). Wash and pierce sweet potatoes with a fork. Roast on a foil-lined baking sheet for 45–60 minutes or until fork-tender. Let cool, then scoop out flesh.
- While potatoes roast, roll out the pie crust and place in a 9-inch pie dish. Crimp the edges and refrigerate until filling is ready.
- In a large bowl, mash 2 cups of roasted sweet potatoes until smooth. Add brown sugar, melted butter, evaporated milk, eggs, vanilla, spices, and salt. Mix well until smooth.
- Pour filling into the chilled pie crust and smooth the top. Tap the dish on the counter to release air bubbles.
- Reduce oven temperature to 350°F (175°C). Bake for 50–60 minutes, or until center is just set and slightly jiggly.
- Let pie cool completely for at least 2 hours on a wire rack. Chill for cleaner slices if desired.
- Top with whipped cream and a sprinkle of cinnamon before serving.
