Ingredients

  • 3 to 4 pounds chuck roast
  • 1.5 pounds baby potatoes
  • 4 large carrots, peeled and chopped
  • 1 large onion, chopped
  • 4 cloves garlic, minced
  • 3 cups beef broth
  • 1 tablespoon Worcestershire sauce
  • 2 sprigs fresh rosemary
  • 2 sprigs fresh thyme
  • 1 tablespoon oil (for searing)
  • 2 teaspoons salt
  • 1 teaspoon black pepper

Instructions

  1. Pat the chuck roast dry and season with salt and pepper.
  2. In a Dutch oven over medium-high heat, sear the roast in oil until browned on all sides. Remove and set aside.
  3. Add onions, carrots, and garlic to the pot. Sauté for 4–5 minutes until fragrant.
  4. Pour in beef broth and Worcestershire sauce, scraping up any browned bits.
  5. Return roast to the pot. Add potatoes, rosemary, and thyme.
  6. Cover with a lid and transfer to a 300°F oven. Cook for 3–4 hours, or until beef is fork-tender.
  7. Remove from oven and let rest for 10–15 minutes.
  8. Shred beef with forks or slice, then return to pot with vegetables and serve with broth.
