- 3 to 4 pounds chuck roast
- 1.5 pounds baby potatoes
- 4 large carrots, peeled and chopped
- 1 large onion, chopped
- 4 cloves garlic, minced
- 3 cups beef broth
- 1 tablespoon Worcestershire sauce
- 2 sprigs fresh rosemary
- 2 sprigs fresh thyme
- 1 tablespoon oil (for searing)
- 2 teaspoons salt
- 1 teaspoon black pepper
Instructions
- Pat the chuck roast dry and season with salt and pepper.
- In a Dutch oven over medium-high heat, sear the roast in oil until browned on all sides. Remove and set aside.
- Add onions, carrots, and garlic to the pot. Sauté for 4–5 minutes until fragrant.
- Pour in beef broth and Worcestershire sauce, scraping up any browned bits.
- Return roast to the pot. Add potatoes, rosemary, and thyme.
- Cover with a lid and transfer to a 300°F oven. Cook for 3–4 hours, or until beef is fork-tender.
- Remove from oven and let rest for 10–15 minutes.
- Shred beef with forks or slice, then return to pot with vegetables and serve with broth.
