  • 4 slices Bacon, chopped (Substitute with ham or omit for a vegetarian version)
  • 1 cup Red Capsicum/Bell Pepper, chopped (Any color works well)
  • 3 large Eggs, whisked
  • 1/2 cup Milk (Can be replaced with non-dairy alternatives)
  • 1 cup Self-Raising Flour (Use plain flour with baking powder if unavailable)
  • 1 cup Grated Cheddar Cheese (Use any type of cheese for a twist)
  • to taste Salt and Pepper (Adjust to personal preference)

Instructions

  1. Preheat your oven to 180°C (350°F) and line a 9×9 inch square baking dish with baking paper.
  2. Grate zucchini and carrot, sprinkle with salt, and set aside to drain for 10 minutes.
  3. Heat olive oil in a pan, cook onion and bacon until onion is translucent and bacon is crispy (5-7 minutes).
  4. Squeeze excess moisture from zucchini and carrot, then combine in a mixing bowl with bacon, onion, capsicum, cheese, and flour.
  5. Add whisked eggs, milk, and remaining olive oil to the mixture, season with salt and pepper, and stir until well combined.
  6. Pour the mixture into the baking tray, smooth the top, and sprinkle extra cheese over it.
  7. Bake for 35-40 minutes until firm and golden brown. Keep an eye on it towards the end.
  8. Allow the slice to cool for about 10 minutes before removing from the pan and cutting into squares.
