  • 1/3 cup dry bread crumbs (Italian seasoned recommended)
  • 1/3 cup grated Parmesan cheese
  • Salt (to taste)
  • Freshly cracked black pepper (to taste)
  • 1/2 cup buttermilk
  • 1/4 cup mayonnaise
  • 1/4 cup ketchup
  • Hot sauce or chili sauce (to taste)

Instructions

  1. Preheat oven to 450°F (230°C) and prepare a baking sheet with olive oil.
  2. Wash and slice zucchini into 1/4-inch thick rounds.
  3. In one bowl, mix breadcrumbs, Parmesan, salt, and pepper. In another bowl, pour buttermilk.
  4. Dip zucchini slice in buttermilk, ensuring it’s coated.
  5. Transfer to breadcrumb mixture and coat evenly.
  6. Arrange coated slices on the baking sheet in a single layer.
  7. Bake for 20 minutes, checking for browning.
  8. Flip each slice and bake for an additional 4–5 minutes.
  9. Mix mayonnaise and ketchup for fry sauce, adding hot sauce to taste.
